Meritus Mandarin Singapore, Singapore — Cheeky Chatterbox Chicken Rice

MAKING time for a nice meal, recently I visited the Chatterbox restaurant in the Meritus Mandarin Singapore that has just reopened after a big makeover. The decor is in shocking red and chic black…but what about the signature Chicken Rice, a Singapore icon since 1971?? Well, the chicken from two farms in Malaysia is still meaty, moist and delicious but there have been minor changes to the dish. The rice used has been changed to a more tender variety with smaller grains plus the previously 100% ginger sauce has now been mixed with spring onion to give it a less pungent flavour as well a green instead of yellow colour. The secret recipe chilli sauce now has chilli padi (fiery little chillis) added ground up chilli seeds are now for added spiciness. Gone too are the distinctive brown boat shaped dishes to hold the chicken meat. Instead are white porcelain dishes shaped like the Mandarin hat logo of the hotel. The dish comes garnished with two cherry tomatoes and two cucumber spears in Zen style. Try too, the Colonial Lamb Stew in Hainanese style which is gigantic and the puff pastry on top is so light , flaky and delicious I loved it. It appears with a huge lamb bone sticking out of the middle like the Egyptian Obelisk in the Place de la Concorde in Paris. The Meritus Mandarin is Singapore is a great place to stay because it is not only luxuriously comfortable, but the location right in the heart of Singapore’s Bond Street that is Orchard Road is hard to beat. Just in the next block is the mega department store Takashimaya where you can get almost everything your heart desires. The rooms on the club floor have really invigorating Hans Grohe showers with multiple jets that can massage you all over as you shower.
