MAKE no mistake, this buffet restaurant in the Royal Plaza on Scotts, the ONLY all Halal kitchened hotel in Singapore has the best buffet to date! As a CIA trained Chef it does take a lot to impress me.
I am here now. I have had lashings of good food, fine de clair oysters, scallops on the half shell, molecular gastronomy "egg yolk" which is actually mango puree by reverse spherification in a calcium alginate bath, sous vide salmon at 45C, Slow Roasted Beef at 120C for hours but still oh la! la! pink and juicy in the middle. Saravan from Penang is superb at service a table, Chefs Simon and Robert roast the meats at the carvery splendidly while Culinary Sous Chef Darren Ong makes super avant garde cuisine a la El Bulli in the style of masterchef Ferran Adria, my friend. It is 2107 and I am going to try some more fabulous food…. ENJOY!!!
