Duval Leroy Fleur de Champagne Brut with fresh cut lime nuances goes a treat with flash-fried crumbed Brie Cheese that is soft and gooey inside, accompanied by Passion Fruit dressed Mesclun Salad & poached Pear. The Blue Potato Vichyssoise is really tasty and very well perfumed with appetizing Truffle oil. For mains I recommend Senior Sous Chef Ian Hioe’s Kurobota Pork Belly with ultra-crunchy crackling plus mouthwatering tangy Tamarind Sauce, sautéed Fennel slices & Blue potato. Tender, juicy Beef Tenderloin with Ratte Potatoes & Truffle Crème fraiche drizzled with Madeira Wine Jus is for the carnivore in you. Seafood! Try Pan-seared ocean fresh Barramundi with yellow squash and baked potato. To satisfy your sweet tooth, partake of yummylicious Sticky Figs & Toffee Pudding with crunchy poached pear & Cream Cheese Ice Cream. Berries macerated with Limoncello the citrusy Italian Liquore, plus refreshing Pear Sorbet is another winner. The Mud Pie is actually ice cream spiked with peanut butter.
