The indomitable Travelling Gourmet appreciates the very fine cusine of Jaan but is shocked by…

MY flute of Krug Non Vintage Champagne in Jaan restaurant in Swissotel The Stamford was S$70 + 10% service charge + 7% Goods & Services Tax on the S$70 + S$7 (service charge) which adds up to S$5.39. Hence the total price of a glass of Krug Non Vintage Champagne in Jaan is S$82.39 or 51.50 Euros at 1 Euro = S$1.60. To paraphrase the Americans: Bananas!

The cuisine in Jaan is excellent. Very well done by Chef Julien Royer and his Sous Chef Kirk Westaway from England. I love the food here with touches of ‘Molecular Gastronomy’, but not to excess. Dainty, fastidious and very appetising, hence its award recently as one of the 50 best restaurants in Asia, by San Pellegrino is well deserved. Savour the food here but don’t have any wine because the wines are simply overpriced. Of course if you are as rich as Croesus, have a bottle of Krug Non Vintage (NV)Champagne which is S$550 +10 % Swervice Charge + 7% Goods & Services Tax. Anyway the food here can be well appreciated without any wine to enhance their flavours.

Contrast this with the Equarius Hotel, a real gem tucked away in the forest far from the madding crowd. Here, the fine dining restaurant with Chef Sam Leong as its Consultant offers Contemporary Cantonese cuisine with touches of Thai & Asian. Yes, Fusion without Confusion is evident in Forest. Take for instance Charcoal-Grilled New Zealand Cod with a thick medallion of Aubergine topped with rather spicy XO sauce (it’s made with dried Scallop). The smoky aroma and sweet, delicious taste of Teriyaki is mouthwatering. Also, the dessert which I love, obviously inspired by Forest, the Thai wife of Chef Sam whose name is also the name ofhis restaurant, has lemongrass ‘Jello’ matched with sweet Thai Mango, tender young coconut plus red Wolfberries (very good for your eyes). A very harmonious fusion of Thai & Cantonese that works very well indeed. 

Ah, but I digress smewhat, because friends & food lovers…one glass of Laurent Perrier Champagne NV costs S16 + 10% Service Charge (S$1.60) + 7% Goods & Services Tax (Singapore’s VAT) on S$17.60 (S$1.23) makes a total of S$18.83. Preiswert! (as the Germans say). There are those who would then say that Laurent Perrier is inferior to Krug. My answer is a question: How inferior? IN addition, if it is inferior (which I do not necessarily believe) is it merely a perception in the eyes of the ‘nouveau riche’? As a diner, would you rather have a glass of  Champagne NV with in Jaan or in Forest? Ha! Ha! I rest my case as they say in the Court of Law.
