MATZO Bread, Fig Jam and Coffee! Matzo Bread comes from the Exodus and is beloved not only by Jews by by all food lovers too.
A symbol of the Jewish Passover holiday is Matzo, an unleavened flatbread made solely from flour & water which is continually worked from mixing through baking, so it is not allowed to rise. The Torah contains a Divine commandment to eat Matzo, specifically, on the first night of Passover and to eat only unleavened bread during the entire week of Passover.
The Torah says that it is because the Hebrews left Egypt with such haste that there was no time to allow baked bread to rise; thus flat, unleavened bead or Matzo, is a reminder of the rapid departure of the Exodus. In the time of the Exodus, Matzo was commonly baked for the purpose of travelling because it preserved well and was light to carry.
Personally, I love Matzo Bread. The version by Albert Menes of France (founded in 1921 in France) is like a light, fragrant & crisp cracker. Perfect with Cheese! Try it with aged Cheddar, Francis Cheese, Crottin de Chavignol Goat Cheese and Gorgonzola. It is excellent too with Proscuitto di Parma, Jamon de Iberico, Bresaola, Pastrami, Smoked Salmon, Caviar and other such cold cuts and delicacies.
Very yummie too with Albert Menes Fig Jam, or to be exact, Confiture Extra de Figue Violette. The intoxicating parfum (perfume) of violets and the flavour profile and earthy macho taste of premium figs is absolutely splendid. You can taste some strawberry nuances. The sexy jam is a dark caramel colour with plenty of fig seeds. I love to crunch the seeds. Did you know that figs are an aphrodisiac? Remember Adam and Eve with the fig leaves? Ha! Ha! Figs also symbolise fertlity because they have so many seeds. Figs are also full of vitamins, minerals and dietary fibre! I adore figs! Fig jam is also excellent with some strong cheeses like Roquefort and Gorgonzola. Spread some Fig Jam on the Matzo Bread/Cracker and then top with some strong tart cheese. Then…Enjoy!
After a nice snack or a meal there is nothing better than a cup or two of steaming hot coffee. Proper coffee with caffeine! NEVER decaffeinated. CafeDirect (Fairtrade Coffee) Medium Roast Coffee won the Good Housekeeping Food Award 2013, and is very rich, smooth as silk blend of African and South American coffee beans. Ahhh…mmmmm 🙂 Sometimes I like to add a dash of Nardini Grappa Riserva or Single Malt Scotch Whisky!
