Where’s the ICE man??
To be brutally frank which is not my usual style, Korean Ice Desserts are the biggest CON in F & B…although it can be very pleasing to the eye and to the palate too…it is mainly ICE…shaved with some milk in it! The food cost is so blooming LOW! The margin so HIGH “and yet” as my best friend Kenneth Hui in HK always says…it is not open…Pour quoi! Warum? Wieso? Per que? Orchard Road rentals,as some highly placed reliable sources say, are higher than in New York and Paris…I had a friend who was paying S$ 30,000 a month in rent for his gourmet Japanese restaurant…As The Travelling Gourmet TM Dr. Michael Lim I have seen so many open and then not open…C’est la vie…et c’est le monde n’est pas mes amis…That is precisely why when many friends & associates implore me to open my own Bistro, as I am a trained professional Chef, I always reply,” I prefer to be a consultant and to write about them…than to run and operate them…:-)” Wahahaha!
Only 10% of new F & B outlets worldwide in general are open after one year in business…chew on that…
