The debonair and inspiring Travelling Gourmet visits one of Singapore’s top hotels to learn…

MORE about true-blue genuine Zhejiang Cuisine. One of my favourite cuisines from China, this is so unlike fiery hot Napalm burning Sichuan cuisine…it is like comparing Foie gras from France to Leberwurst (pate) from Germany. Simple, well presented…with the seductive flavours of the ingredients intact, this is something you must taste for yourself to appreciate. Chef Wang Yong, despite being the Chef in one of the world’s most exclusive resorts, patronised by China’s high society and elite remains a humble and cheerful Chef. The truly great Chefs, who I am honoured to call my friends. like Heinz Beck, Guy Savoy, Joel Robuchon, Wolfgang Puck, Anne Sophie Pic and more…are as skilful as they are humble. They have no need to prove their expertise…their cuisine speaks for them. So it is with Chef Wang Yong and his dishes. Take for example, one of his healthy and comforting soups. Made with cod, this fish soup has sliced mushrooms, carrots, black fungus, cucumber and ginger. I love black fungus and ginger!

Am I in Egypt?

Presentation of braised soy infused pork and bamboo shoots in the shape of an geometrical Egyptian pyramid is outstanding! It comes with bite-friendly pumpkin bun.

For carnivores,  mouthwatering Meatball, lovingly braised with Crabmeat in a voluptuous broth…is to go undercover behind enemy lines in Syria for. There are many dishes to tempt the adventurous palate…like Shanghainese noodles fried with dried shrimp , then spiked with a sauce made from dried scallions and premium soy sauce. Simple but very satisfying. No super hot chilli oil like Mala-Tang to paralyse your tastebuds so you do not even know what you are eating! A healthy dish I like a lot comprises String Beans with bamboo shoots and minced pork. Don’t just take my word for it…
